Baked Quinoa and Veggies
- 1 cup quinoa
- 1/4 cup sunflower seeds
- bay leaf
- pinch of cinnamon
- 1 cup celery, chopped small
- 2 medium carrots, chopped small
- 2 small zucchini, chopped
- Optional: ½ cup peas and ½ cup small diced yellow onion
- 1 tsp ground coriander
- 1/2 tsp paprika
- pinch cayenne
- 1/2 tsp minced ginger
- 1/2 tsp+ ground cumin (the cumin makes it!)
- 1 3/4 cup vegetable stock
- 1/4 cup minced parsley or cilantro (aka, fresh coriander)
Instructions:
- Put quinoa, broth, veggies, and spices (except parsley/cilantro) into casserole dish with lid.
- Cook at 180 degrees C for 20-30 minutes or until all the water is absorbed.
- Remove the bay leaf.
- Stir in the minced fresh parsley or cilantro.
